Soooo… We got so busy getting the last pieces of our subscription boxes together I totally didn’t pay attention to anything but that! So I am deeply sorry! But I’m back with you today and wanting to bring you this beautiful spring equinox inspired recipe I stumbled upon this week.  I believe you will enjoy this and will feel like you’re embracing the very essence of spring is in your cup. While this recipe is geared for being served hot, I bet enjoying it chilled or cold would be perfect for those especially warm spring days that creep up on us here in the South.

Wake Up To Spring Tea

Makes 4 cups of tea

2 tablespoons dried nettle leaf
1 tablespoon dried burdock root
1 tablespoon dried calendula flower
1/2 tablespoon dried lemon peel
1/2 tablespoon dried, seedless rose hips
1/2 tablespoon dried rose petals

Combine all ingredients and store in an airtight container.

To make the tea: For 1 cup of tea, pour 1 cup of boiling water over 1 rounded tablespoon of the tea blend. Cover and steep for at least 20 minutes (ideally 4 hours or overnight). Strain and sweeten with honey, if desired.

You could also infuse all 4 cups at once (a quart mason jar works well) and sip it throughout the day.

Recipe Notes

  • To substitute fresh herbs, use 3 to 4 times the amount of dried herbs called for.
